Hi I have a few more question bellow;
Adding product: There are two product types (Tours and Shop Item). The default setting is toured but I would like to set the default as a shop item since I’ll be adding several thousand products with All Import plugin.
The product picture size on product category pages: I would need the product pictures to be square or in a vertical orientation.

The theme is built primarily for tours and hence the tour product is the default option rather than the shop one. You will need to customize the code to make the tour default one. However, if you are after importing products, why not just import to shop instead rather than editing the files?
You can add your custom css to make them vertical and/or square by adding width property to the select that you are after.
