Hello Daniele,

If you mean simply renaming them from country and activity to destination / tags, then this can be simply done using the string translation. However, if you mean replacing the functions with other functions, then this will require theme customization and you can use theme customization services like WP Kraken to modify the functions to your specific requirement. Additionally, you can also just remove those two fields as shown here: Remove countries and activities from tour card
