I am trying to figure out how to give our site a full background without changing to a boxed layout. If you visit the site now, I would like a background that covers the entire body of the page. So that all of the white space would be a background image.

Hello, the background options do require it to have a boxed layout, else the whole experience will be jumbled up with text floating under images etc. as well as scrolling issues. To set your backgrounds, you need to go to Appearance >> Customize >> Layout and Design >> Site Layout and then select boxed to use one of the site background options.
