We would like to customize our listings of the products.
We would want to have 5 pages, one for each category of products. The template doesn’t allow for us to directly show the customer a filtered list (only the products from that category) while also having the right sidebar present.
What can we do to have this feature possible? How much would it cost?

We are not doing customization work at present. But you can use theme customization services like WP Kraken who has already customized our theme for scores for users.
As for your request, the theme does have a category page for products. For example, https://themes.waituk.com/entrada-modern/product-category/city-tours/
which lists all the products which you have marked under product category to be city tours. Alternatively, users are able to search and filter only the products under specific categories via sidebar, which is the search result page. That is the reason we have alternate template for search results and categories.
